The word kipper probably derives from the Dutch küppen, meaning to spawn, and was first applied to out-of-season salmon which, because of their emaciated condition and lack of fat, were usually split and smoked to make them more palatable. ![]() One should use them up quite soon (unless they are tinned of course) if they are only in one's pantry, not in the fridge! In the UK, kippers, along with other preserved fish such as the bloater and buckling, were also once commonly enjoyed as a high tea or supper treat most popularly with inland and urban working-class populations before World War II.Smoked herring, they can be grilled, fried or poached in water. In the United Kingdom and North America they are often eaten grilled for breakfast. Just an FYI, but that is a rather important thing.A kipper is a whole herring, a small, oily fish, that has been split from tail to head, gutted, salted or pickled, and cold smoked. This makes them not as convenient as his former brand and more of a pain to use. Every single time, it has pulled right off, so we always need to use a can opener to get into them. Oh-I nearly forgot to add that the pull tab on this brand is horrible. Thank you, Swanson, for carrying this brand and especially the kind with low sodium. I'm not sure we'll continue purchasing this brand, especially if they also short us on product, but for now, we will stick with them (since I purchased a lot of them at once and it will take him awhile to go through them-he does eat these for supper several times per week, adding a squeeze of lemon juice and some black pepper). Maybe this is just how businesses are going to do things from now on. He is moderately satisfied with them, although they too have had several cans that were not full of product.
